The Black Walnut syrup is produced in Wyoming County Pennsylvania along the Susquehanna River. Many of the same practices that are used in maple processing are used in the walnut processing. One of the major factors with the walnut syrup is the filtering required. Pectin is a natural ingredient in the walnut sap. Pectin makes jelly. If the sap isn’t filtered at regular intervals the walnut syrup will turn into jelly while being evaporated. Significant losses result from this filtering process.
